Lauren Solomon shares her favorite healthy and delicious version of the signature banana chia seed pudding served at True Food Kitchen in Newport Beach.
12 ounces of milk. Use any type of milk you like. (Lauren used hemp milk in this recipe.)
2-3 very ripe bananas
1/4 tsp. fresh lemon juice
1 tsp. vanilla
pinch of salt
Blend well in mixer.
Then, add 8 tablespoons of chia seeds
Lightly blend until seeds are mixed with liquid.
The mixture will set up when chilled for two hours in the refrigerator.
Garnish with fresh banana and toasted coconut.
This is great for a healthy and delicious breakfast or a nice mid-day treat.
